Bug Description
the default gunicorn conf that ships in the appliance specifies a error log, but nothing gets logged there
we should also be logging an access log
also, the actual appliance code sets up loggers and logs stuff but we're not configured to capture any of that, either
once we enable some logging, we should also ensure logs are properly rotated to avoid filling up the appliance disks
