Bug Description
Context was in testing and reporting bug #1011257 (reports a functional problem with actually using this dialogue). I noticed that when you go into "Edit Mount Options..." on a volume, the dialogue you get has an "Automatic Mount Options" switch at the top, which defaults to "ON".
In this state, the rest of the dialogue is greyed out.
You have to switch that switch *OFF* to be able to ungrey the rest of the dialogue, set some options, and save them to /etc/fstab.
This seems backwards to me. :-) Surely you should be switching the options *ON* to be able to edit and save them.
As such this is a user interface / usability issue rather than functionality.
Maybe the problem is a misreading of the ON/OFF switch. Maybe it's currently written so that ON means "treat entirely automatically, in the default way" and OFF means "allow manual configuration". But the wording is a bit ambiguous and I (with fairly good English language skills) read it the other way: that the switch labelled "Automatic Mount Options" means to enable the user to set options for mounting that volume automatically, in which case the logic of the switch is definitely reversed.

here on quantal i386, the system itself re-add an entry about fd0 into fstab, but this hardware does not exist.
But switching to OFF into g-d-u cant be validated: it start a loop and never accept the OFF choice.
