A quick google search found this page: https://www.linuxuprising.com/2020/07/how-to-restart-gnome-shell-from-command.html. I pressed Alt-F2 and then r, and that stopped the logging without a reboot!
I'd still like to know why this suddenly keeps happening. 21.04 is due out in a few weeks and I'm hoping that will fix it.
