The error in your logs is:

update-alternatives: using /usr/lib/shim/shimx64.efi.signed.latest to provide /usr/lib/shim/shimx64.efi.signed (shimx64.efi.signed) in auto mode
mount: /var/lib/grub/esp: special device /, does not exist.
dpkg: error processing package shim-signed (--configure):
 installed shim-signed package post-installation script subprocess returned error exit status 32

Please run dpkg-reconfigure grub-common to tell grub (and thus shim) where your EFI System Partition is. Without this information being correct in the debconf database, shim cannot install an updated bootloader.
