Thanks Martin, I can indeed see how this could happen. I'm preparing a fix for this.
Meanwhile, if you feel adventurous, you can try to fix the situation yourself like this: edit the file /var/lib/ dpkg/info/ snapd.postrm (as root) and change all occurrences of the calls
rm -rf ...
to
rm -rf --one-file-system ...
save it, and then try again.
