From the examples in the latexsearch, I see that the greek (lower-case) \nu is always typeset in italic. Is this the rule for every greek letter in mathematic formulas?
About upper-case, I would guess that normal (not italic) is more appropriate, because of cases like \sum (Σ, capital sigma) and \prod (Π, capital pi).
So, I guess latex does what is (is it?) the norm for scientific formulas.
