I am also experiencing the broken snaps under the default ZFS testcase (21.04 April, 4th build).

Interestingly, when using the same install media, I did not experience any issue with snaps when doing the LVM encrypted testcase.

I can also confirm the workaround posted (#7) by Christopher worked in my case.
