Editing an saving an eps image with inkscape 0.48.1 and inserting into LibreOffice 3.3.3 will display a very hires "preview" image in LO. This slows LO down considerably.
Does Inkscape generate this preview image? I found that simply scaling down and then re-saving will solve the problem, with no (visible) consequences for the printed eps.

The software I usually use to generate eps images (tecplot) offers a dialogue to specify resolution and bit-depth of the preview image, I always use very low resolution and 4-bit grayscale, and those are handled in LO with no visible slow-down, even in large quantities.

I'd suggest to have a choice at least of resolution, as very highly resolved preview images not only slow other software down and increase file size, they are also hard to tell apart from actual vector graphics on screen, and that can lead to bad surprises in print. Although of course some may want to use this effect -- hence the need to specify a resolution.
